Why not just use the Nvidia drivers? You can load the official Nvidia ones if you want if the Mint ones aren't working. 

 

There used to be newer drivers in synaptic (which I believe has been removed) but you can still use the terminal and apt install, to get newer versions than what are in the driver manager.  At least that used to be a thing, I had to do this for a while for my 4090.

Nouveau is part of the kernel, linux-firmware, and mesa stack.
For NVIDIA however you really just want their proprietary driver with their gpu-open kernel module. The open source NVIDIA stack won't really be all that viable until NOVA, NVK, and Zink are finished. Nova is a open source driver from RedHat that will replace the nouveau driver in the future for Turing and newer.
