Then your thermals are fine, nothing to be worried about.

So I recently build my own gaming pc for the first time. I got a Ryzen 7 7700x with the peerless assassin 120 SE. However, when gaming, my temperatures seem to be pretty high, even when idle, and as I am a beginner in the pc world I dont know if they should be that way. Maybe I didnt mount the cpu cooler correctly, and I may need to reinstall it, thats why I am asking for help.

My fan configuration:

Cooler:

43C, 40%

63C, 53%

75C, 70%

85C, 100%

Case fans (they're all the same):

43C, 35%

55C, 45%

65C, 65%

85C, 100%

My case is the Corsair 4000D.

My case fans are the ARCTIC P12 PWM PST. I have 3 in the front for in-take, one above the cpu cooler for in-take, and the one in the rear is for exhaust.

Temps:

When idle around 45-47C

When gaming in Red Dead Redemption 2 around 68-75C

I also tested in cinebench and it got to 85-90C

did you apply thermal paste and take the plastic peel off the bottom of the cpu cooler?

That's fairly common. AMD's boost algorithm is very aggressive in an attempt to make the system feel more responsive. Because of this, at the first sign that you're going to be doing something, it boosts up to the max single core boost. That first sign can be anything from Windows checking for updates to even just starting to move the mouse, so "idle" doesn't really exist.

Just base your thermal performance on how well your load thermals are, and the temperature alone looks like what I'd expect for RDR2 and Cinebench. That said, because of that boost algorithm, load temps aren't actually that accurate at measuring thermal performance as the CPU will just vary the voltage and clock speed to stay at the same temps, so the actual way to measure thermal performance nowadays weirdly enough is to measure the performance. What is your Cinebench score?
