I just got a mini 3 a few weeks ago and Ive seen varing windspeeds on it.... what is the max wind I can fly it in and be fine?

Depends on your tolerance to lose the drone in a fly off condition.  I'm sure most people that are storm chasing with these things do it because they are cheap and if they get lost/crash it's not a huge financial loss.  Your not gonna fly a $10-15K drone into a storm when a $400 one can get the job done.  They will still get the 720P cached feed to the app to use as video footage for their youtube channel even if the drone is lost and the hi-def footage on the SD card is gone.

What you can do and what you'll find solid stats on are totally different. I'd trust what the manual says, anything over that is at your own risk.
