Those are just registry entries. They can be modified or removed using registry editor.

 

See picture below ...

 

go to Computer\HKEY_LOCAL_MACHINE\SOFTWARE\WOW6432Node\Microsoft\Windows\CurrentVersion\Uninstall\   and one of the sub-folders will have DisplaName set to "Grand Theft Auto V"  and the QuietUninstallString and UninstallString tell Windows what to launch to uninstall the product.

 

InstallLocation entry is where the software is installed.

 

In the picture below, if I were to manipulate "Samsung Magician", I would look at that folder {29AE3.... } and you can see DisplayName is set to "Samsung Magician"

 

Delete the whole subfolder and the GTA entry will disappear from that list.

It's probably something like "C:\Program Files (x86)\Rockstar Games\Grand Theft Auto V\" or "C:\Program Files\Rockstar Games\Grand Theft Auto V\". 

 

Try uninstalling it from inside the Rockstar Games Launcher first.
