will a 5V 1A, 2.5 inch hard disk work on sata to usb adapter?

Yes the 5v 2.5 inch drives do work with just a sata to USB adapter. The 3.5 inch ones require a different adapter that also provides power through a separate wire.

It should be fine, most usb ports can provide more than what the official spec says.
