It's actually what I run my plex/file storage off of and it runs great. Although I have an old GPU in mine too

Plenty. I ran my entire homelab on a i3 6100 for years, that was half a dozen VM’s, one of which was truenas, and one of which was Ubuntu running Plex. I could transcode 3 1080p tv shows (already somewhat compressed) streams to 720p, or one full blue ray quality 1080p movie to 720p , and I only have my Plex VM 2 of my 4 threads.

Absolutely.

 

The only thing that might tax it is transcoding video on the CPU, but if you've got a Plex Pass subscription you should be offloading that job to Quick Sync on the iGPU anyway.
