Steam Saves for Dark Souls Series Keep Disappearing

At this point, I'm becoming the crestfallen knight.

 

On multiple occasions my steam saves for a Dark Souls game (be it 2 SOtFS or 3) have just disappeared. I believe this happens after multiple updates occur on my system between instances of starting the game. It is becoming increasingly frustrating. I also rarely see my saves reappear after reinstalling the game after a system refresh, for instance. This game is set to upload to the steam cloud, but steam claims it is up to date, so I don't know what else I can do to get my saves back. Has anyone else had to deal with this? Thanks in advance for the help.
