Yup, if you take the hard drive with the Windows 8.1 out. Then install the other OS on a different HDD. Windows 8.1 will still be on the original hard drive and it will boot from it with no problems when you reconnect it.

As long as the drive with Windows is completely unplugged, it will be safe.
