Is there much performance difference between different models?

ASIC% may vary. Higher will take less V to keep base clocks, lower, the opposite. Other than that, only the cooling solution is different.

I bought myself 2 EVGA GTX 780 hydro copper GPU's and as far as I know they are just standard 780's. Would there be much difference if I had bought a classified or SC version of the 780?

 

I think the SC version just has a bit of a higher clock while the classified editions are cherry picked for better overclocking.

So they'll just overclock more efficiently then my standard 780's, so performance wise at stock will they perform equally?

In regards to performance, the only difference are their clocks speeds. If clocked at the same specs, they might as well be the same card.

Well they've got higher clocks out of the box so no.
