The 11700K is not a great chip. I would go with the 10700k, Gamers Nexus did a video on this 

 

If you jump to 16:45 for synthetic tests you see it performs better then the 11700k. Same with gaming but this is a workstation so not a big deal. You can probably save some money as well with a 10700k and get some more ram. With a workstation I would say a minimum of 32 gigs of ram especially with adobe applications eating up ram.
