Help with plist editing mac

So I want to change my dock's plist but I have no idea what to change. I have a school laptop that for some reason has a restricted dock and I can only change what can be done though the right click menu. It also has apps I don't use stuff in the task bar. When I delete the apps I get the question mark that means it cant find the file it's looking for. And when I restart my computer the dock resets to the school default. BTW I have admin but somethings are still hardware locked so yah can't do much. Any idea on what I can to set my dock to stock settings (I tried "killall Dock" but it puts it to the default the school set). I should also mention the school doesn't give a crap about what I do so thats not a problem.

I'm not sure what to edit in the dock .plist file, but if you're looking for a nice plist editor I can recommend ProperTree. Been using it with my Hackintosh for awhile now. 10/10 would recommend and a lot quicker than Xcode's.
