I just viewed the "Air Conditioner make PC go Brrr" on YouTube, maybe I haven't looked hard enough OR thought this through enough BUT if condensation is a problem then why not build a rig that houses the motherboard upside down causing the moister to drip away from the cooling block and other components?

Gravity is not really the thing when we talk about condensation. The socket is already ruined at the point when there's enough moist to form droplets.

Small amounts of moisture typically don't drip. Instead moisture clings to surfaces and can still cause shorts this way.

Because the whole socket area of the motherboard is getting wet through condensation. "letting it slide" doesn't help.

 

There are LN2 motherboards with built-in heating around the socket area, but I dont think they make them anymore and these videos are most often not done with any LN2 boards.

For all the reasons others states, mainly the fact frost will build up on the mobo and socket area. If things are dripping onto the mobo, your way too late.... Nothing should be dripping in an LN2 setup, but frost and condensation will accumulate and that moisture will fry your components, or make things unstable. Thats why they use vaseline and insulation - this keeps air off the cold parts so moisture can't condense.
