Just wanna make sure Im right

Ok so I wanna build a NAS, mainly just to store media on to be accessed my plex. If I use freenas can I take 2 8tb drives, set up raid 5 on them, move all the data off a current 8tb drive I have to the nas then take that third 8tb drive and add it into the RAID so I have a total of 2 8tb drives plus a 3rd for parity or do I need to start the process with 3 drives?

Id look into unraid as its much easier to expand later on.

 

But you can setup a degraded raid 5 and fix it by adding the missing drive later.

Ok ill look at unraid as I want to be able to add drives in instead of dropping a grand up front for the drives/storage I want in the end. Thanks for the help
