Id make a backup before you touch the drive, then you can restore the backup if you want to go back to win 10(you probably should have a backup already).

 

You can also dual boot so you can have win10 and pop os on the same drive.

You could do it a few ways. Before deleting windows you could backup all your personal data and create a windows usb installer and toss it in a drawer if you decide to go back. You could use a imaging software like macrium reflect to make an image of the system to restore via their recovery media later down the line, or you could just chose "install alongside windows" and have both on the computer and just delete the bootloader and linux partition if you ever go back.
