After the initial thread and some good recommendations, a bit more thinking and budget extension I think this setup could be OK for me. I did do quite a lot of research but maybe I missed something.

The usual usecase will be several Virtual Machines running concurrently and a lot of browser(s) and tabs open, running on linux so I prefer the AMD Graphic Card - and I think the "new with warranty" RX 550 that I can get locally for around 80EUR will fit the bill nicely. I went with B550m Mortar WIFI because B550 gaming edge WIFI is currently hard to get for me, and I do need WIFI connectivity for now (if no, I would probably go with the B550 Tomahawk). NVME is probably a bit of an overkill, but I am usually working with a lot of small files so I think it's worth it (and Amazon has an amazing price on it).

Is the PSU good enough to power all this? Any better RAM options? Did I miss anything and will shoot myself in the leg?

My current system is very similar to those specs (better mobo for some OC, better gpu and powersupply because also game on it) and its excellent for my development purposes and VMs. 

 

The only problem I have had is VMware workstation being a hot pile of garbage on my 5900X system for some reason. Though I have never had an issue that I haven't been able to work around. 

 

@Herman Mcpootis made some good edits to you're parts list that make sense.
