11600K should be enough. The Ryzen 5 5600X is also good, but it's not in your list.

More than 6 cores are not important for gaming.

Single core speed matters.

My build:

Intel Core i7 9700 8x 3.00GHz So.1151

CPU cooler

be quiet! Shadow Rock Slim

Motherboard

MSI B360-A PRO Intel B360 So.1151 Dual Channel DDR4 ATX

What about an 11700f as long as there is going to be a gpu there? I’d prefer an 11700 to a 11600k myself. Not sure if there is a powerful argument for more though.  I’ve heard k chips have been going for the same price as non k chips though in which case there’s little reason not to get one. You don’t actuall HAVE to overclock it, and the k stuff tends to be better binned. I don’t know for sure that more than a 6/12 chip will be needed for a long time. I think it’s possible though which is the main argument for 8/16 over 6/12.  The 5800x may turn out to be cheaper though because AMD motherboards tend to be cheaper than intel boards.  If the 5800 is cheaper (or possibly even the same ) as an entire device it’s a better deal.  Different components cost different amounts different places though, so it’s going to vary. None of these things are top end stuff and all of them will work, so it matters a lot what the pricing is.  This is a price/performance question.

Not a pro, not even very good.  I’m just old and have time currently.  Assuming I know a lot about computers can be a mistake.

I would say not important currently.  A possibly unimportant difference.

Get a Ryzen >:)

There was a time rather recently when AMD had intel more or less beat cold in price/performance. With pandemic pricing though things have gotten more fuzzy and situational.

Agreed. Though Intel's naming is just too confusing for me. Also, their way to changing sockets every few generations is very stupid in my opinion, since AMD showed that same socket can be used for many generations..

I think OP should try searching in local stores since Ryzen chips are coming in stock in many areas 😄

Depends on how you use your computer. Single monitor, one game running only? 6 cores will be fine for the time being

Multiple Monitors, running multiple programs while gaming (discord, chrome, etc.)? 8 cores would make the experience much smoother

If you're getting a 3080/3080Ti though, I would recommend getting a better CPU so your overall system is balanced. The price difference between 6 and 8 cores when your already spending so much on the GPU is pretty negligible in my opinion. Another thing to consider is that consoles have 8 cores. Do you really wanna build a PC that's less powerful than a console when a gaming PC does more than "just game"?
