also, my old card only used 1 8pin cable but the new one needs 2.. can I just use the second connector on the existing cable (pictured) or do I need to run a whole new cable?

You can technically run just one cable but it's not safe to do so. A single 8-pin is rated for 150W, 2 8-pins is 300W. If you use just the one cable you're requesting 300W through a cable and connector rated for only 150W, which is twice its rated output. Not safe and if you go over that power limit (if you have an Ampere card it has quick high-power-draw spikes) things can melt, burn, short, or any combo of the three.

TL;DR Please run two cables.

Just wanted to get some guidance on swapping out my gpu..

i’m wondering if I should uninstall my current driver / GeForce experience before removing the current card and installing the new one?
once installed should I just boot straight into windows and download new drivers etc?

running ddu in safe mode https://www.guru3d.com/files-details/display-driver-uninstaller-download.html and selecting the uninstall and shutdown method before swapping gpu is the way i usually go, works well imo. after that boot up and driver install, and you should be good to go after that.
