Should I change Boot Option #1 to the one that says UEFI?  That’s the Windows USB drive, right?  Then save changes and exit and it’ll restart and install Windows, where I will be able to choose the drive I want to install it to?

you can just boot straight into the installer usb by clicking on it in 'boot override', instead of changing your boot priority.

 

EDIT: ps: if you have more than one drive in the system, it's best to unplug all drives except the one you want to install to. otherwise the bootloader may end up on the wrong drive because windows 10's installer is broken like that.
