I'd go for Intel Core i5-10600KF and with a suitable motherboard for that.

Why is a 580 so expensive now? When I bought mine it was like 400-500 bucks

I think this is better:

added a really high end PSU too (so pricey is not necessary, but the Corsair in your list lacked one cable/feature), those notes are not very important now..
