How to just record audio with a canon m50.

you can't. you need ether a dedicated audio recorder or the correct cable to plug it into a phone

Ill just record a video and cut the video in post

Why use a camera for this? Why not use a cell phone with a recording app? At least then you could monitor and adjust levels.
