The single 4+4 cable is enough to power a 6 core processor. Motherboards have 8 + 4 because the extra 4 pin makes sense when you install 16 core processors like 5950x or when you do extreme overclocking with high core count processors. For anything 8 core or less, the 8 pin is enough even if you overclock.
A Ryzen 5600x consumes maybe 80-90 watts when you're gaming, and the single 8 pin connector is good for over 300 watts, so it really is enough. The 4 pin is optional.
Those cables are not good, because the wires are very thin. The 4 pin connector on the motherboard is supposed to receive up to 190 watts or so, but the thin wires on such adapters can only safely transfer maybe 100 watts. With more, they'll overheat, the insulation will start to melt and can even burn up.
The 4+4 on your power supply goes into the 8 pin connector, it's designed like that. It's actually a 8 pin connector which can be split into two parts.
