MC servers only care about singlecore performance and also benefit from a high clockspeed. Any 771 CPU will struggle to hand more than just a couple players even on a Paper server with very few plugins.

As said by @kelvinhall05, having a CPU with amazing single-core performance is much better than having lots of cores.

I have a Phenom II X4 955 in my Minecraft Java server, and I noticed a benefit from running 2 cores @ 4.4 GHz vs 4 cores @ 3.95 GHz.

Depending on the size of your ambitions, an old 2600k or similar will do you well. The 2.5GHz of the e5420 just isn't enough. It's mostly about the single core performance, but I wouldn't go dual core though, the system still has other stuff to keep up with. Personally running a 2600k for an average 10 people online semi-vanilla server with very little to no hickups.
