If your goal is 2Gbit speeds SMB3.0 multichannel is enabled by default for local file transfers.

If you're trying to achieve over 1Gbit from your ISP this won't work.

I am using my main computer as a Plex Server. I am hoping that by NIC teaming, it will improve the Plex experience on a single or multiple devices as well as improving data transfer to a dual bay NAS that also has dual NICs.

Unless you're saturating Gigabit it won't help things on a single or multi-client basis. If you are saturating Gigabit then configuring Link Aggregation will help on a multi-client basis but you need a managed network switch to set it up.
