NVLINK and VR Gaming

Here's what I want to do, and I want input on if the performance will increase, or if I should run two cards separately.
 

I intend to have 3 4k 144hz monitors, as well as my Valve Index (which uses DP) connected simultaneously. What my main goal is is to be able to play any game on my PC (Such as Overwatch, Monster Hunter: World, GTA V, etc) while in Bigscreen or other Virtual Environment with little to no performance drop. I want to get 2 Asus 3090 OC, and I'm trying to figure out which configuration will best fit my performance requests. Also, keep in mind, cost is NOT a factor.

Id just get a single 3090. Your just using SLI with dual cards, and SLI doesn't have great support in games now, and has issues like stuttering. geoforce cards can't use full NVLINK, so its just using normal sli.
