Laptops generally should be okay, there are a few that have quite limited BIOS/boot options.

Just install one OS on one drive and other OS on the other drive and it should just work. You won't lose anything just by trying, unless you delete any data.

My hard drive does have a lot of empty space? But how do I know what is empty?

Caveat: I'm not as familiar with POP OS as other Distros.

 

My understand is that its very difficult to achieve exactly what you want due to the fact POP OS uses systemd-boot to boot itself rather than GRUB. AFAIK its not possible to add extra boot entries with systemd.

 

The workaround is just use your Laptops built in Boot Menu to choose between Linux & Windows.

 

Also I'd strongly suggest unplugging the SSD before installing POP onto the HDD. Its not 100% essential but can avoid bootloaders getting confused.
