Multiplayer (Co op counts :P) would definitely have to be Portal 2.

RPG: Fallout/Skyrim, Mount & Blade Warband

Action: Dark Souls, Witcher series
Survival: Killing Floor

MMO and Multiplayer depends on whether you have someone to play with. In that case most games are fun when playing with someone else anyways.
