I just decided to make a build a couple of months ago and boy did I regret it lol. Just finished making it yesteday and all i need is the GPU, but like everywhere in the world there is unprecedented GPU shortages and they are way overpriced.

 

Locally have 2 options.. MSI gaming x trio 3070 for 715 Euros and Saphire Pulse 6800 for 825 Euros. Normally i would wait but i just want to game right now on a vacation for 3 weeks lol but the prices might get even higher.

 

Gonna pair it with ryzen 3600, gonna upgrade the CPU in the near future to 5600x and thats about it and plan to play on 1440p. I dont plan to make yearly upgrades so im leaning towards 6800 for more futureproofing because of 16GB.

I had both a 3070 and a 6800 - here are my thoughts. 
If you really care about ray tracing and DLSS then get a 3070. If you can live without it then get a 6800 which will give you higher performance in most games. But the ray tracing performance on the 6800 is below that of the 3070. 
Another factor to consider is pricing - you say that the Nitro Pulse 6800 is 110 Euros more than the 3070. That sounds like quite a large difference in my opinion and I’m not sure that the 6800 is worth that much over the 3070 (that’s something only you can decide). 
About the future proofing with 16 GB, there are some reviews that say that this is overkill for 1440p right now but who know about future gaming requirements. You might also want to consider the performance boost from smart access memory which puts in favor of the 6800.

In my situation, I was able to pick up a reference 6800 (used but practically brand new) about a month after I bought my 3070. I paid less than my 3070 so I sold my 3070 and kept the 6800. One factor in my decision was the large hit in performance when enabling ray tracing. The other was that I thought DLSS made some games look blurry (though this is just my personal opinion). 
TLDR; if you want purely higher FPS and don’t care about ray tracing and DLSS get the 6800. But at the prices you mention the 6800 might not be worth it over the 3070.
