Ubuntu desktop as operating system for server

I am working on a project that needs to set up a server. Since I am the only Computer/IT guy here I would be the one doing it. I have no experience with setting up a server so I wanted to ask if it is viable to use Ubuntu desktop OS for my server because I think having a GUI would help me a lot in troubleshooting and working with the server. The other reason I am asking this is, are there any downsides to having the desktop vs the server version of Ubuntu?

Another question is I need to use MySQL for the project. What do you recommend installing for this on Ubuntu?

Thank you.

The only difference between Ubuntu Server & Desktop is the packages it comes preinstalled with. Functionally they are identical. (obviously each is tuned more for their intended task so using Desktop on a server will require you to install more packages than you'd have to if using the Server build)

You can install MariaDB or MySQL on Ubuntu very easily. If you're intent is to try to stick with GUIs where possible I'd suggest installing the full LAMP stack and using PHPMyAdmin for DB management.
