Handbrake is a good option.

FFMpeg is an alternative, but the result will be the same as Handbrake. Handbrake is just a fancy UI, but it still uses FFMpeg under the hood.

Will FFMpeg be able to convert dvds?! 

 

For media server, which system would be better for the Raspberry Pi 3 B+? Plex Server vs Kodi?! I have over 50 dvds which I would like to convert to a digital format. Any suggestions?! Would a Raspberry Pi 3 B+ be able to trancode a dvd to digital format?! Or will it have to be performed on an X86 computer!? I have an Acer I5 which I do not use right now.

You are better off first ripping DVDs to MP4s. It takes much more power to encode them than to just stream already encoded video format. For conversion from DVD to digital I wouldn't use RPi. For streaming video of DVD quality, I think RPi is good to go. Could be for more, idk.

 

FFMPEG can do DVD to MP4, and automate the process perhaps better than Handbrake. But since its command line tool, you need to know more about configuration and variables, especially if you are gonna need to work with subtitles or multiple audio tracks (and bad quality DVDs like what I have).

Handbrake can do direct conversion from DVD to digital. WithFFMPEG its recommended that you copy stuff to HDD first.

 

There's also MakeMKV which handles some DRM format bit better.

What do you mean by this? Some discs have more robust DRM than others. There are ways to break those, however talking about that is walking on the line of whats allowed here. So just start using software and see how it goes.
