m.2, 2.5, and 3.5 are all form factors, so the size of the drive.

 

NVMe is a protocol, so how the drive talks over the pcie bus. THis is normally the alternative to AHCI over SATA. 

 

If your getting a new system, id get a nvme m.2 for boot, and then a 3.5 hdd for mass storage if needed.

They're literally just different physical sizes.

 

SSDs are usually 2.5 (if they're not M.2 form factor) though some massive ones are 3.5; hard drives are 3.5 for desktops and 2.5 for laptops and small form factors.

 

As @Electronics Wizardy states, 3.5 usually represents far better value for money on the desktop side.

By the way, my desktop is a docked laptop. Get over it, No seriously, I have an exterrnal monitor, keyboard, mouse, headset, ethernet and cooling fans all connected. Using it feels no different to a desktop, it works for several hours if the power goes out, and disconnecting just a few cables gives me something I can take on the go. There's enough power for all games I play and it even copes with basic (and some not-so-basic) video editing. Give it a go - you might just love it.
