wasn't expecting it but I basically built the same system I run now lol
2600x will get you started for a few years until 5000 series drops in price when the next motherboard/cpu combos come out and Asus has announced the X570 bios upgrade for 5000 series.
2070 is an alright price but I'd be looking at used 2080's at the same price for better performance per dollar
700watts is a little overkill but gives you space to upgrade to RTX3000 series or AMD 6000 series whichever makes more sense when you need more gpu power.
