I was wondering if it would be possible to set up 2 different gpus in 1 system with one gpu dedicated to mining crypto (sapphire vega 64 reference,) and the other dedicated to gaming ( sapphire nitro+ 5700xt.) I would not be doing both at the same time, as my power supply would not be able to provide enough power to do so.

You could, but the 5700 XT is a better mining card anyway so why would you?

¯\_(ツ)_/¯

mining on a single card isn't worth it.

Im a bit inexperinced with mining, but would the vega 64s higher memory bandwidth with slightly lower gpu and memory clock speeds not allow for a higher hash rate?

You can't tell what has a higher hash rate just by looking at specs, at least not when comparing different GPU generations. Check a hash rate table and you'll find that the 5700 XT is about 1.5 times better than a Vega 64.

¯\_(ツ)_/¯

Why not use them all? Seems easier that way and actually worth the time.
