what is a mouse polling rate?

i have a logitech g102 pro and in the software i have polling rate option between 125, 250, 500, and 1000, is the 1000 hz the best?

Polling rate is how many time a computer checks for the mouse's position.

This is how many times in a second the mouse will look for input and send it to your computer. With 1000Hz your mouse will send inputs to your PC every 1ms. Basically, the higher, the better.

how USB mice work is not that they report their position back to the computer when they want,

instead the computer asks for its position and the mice returns it.

 

Polling rate is how many times per second that request is made.

 

Usually:

Higher polling rate = more updates = more data flow = potentially lower input latency

So yeah as mention already. 500Hz minimum recommend, 1000Hz would be recommended for like 240Hz monitors and fps gaming at such.
