So, why can you not just disconnect the ethernet in Windows 10?

I run into something saying you have to disable the device, bot sure how?

Trying to see if I can do something using my phone as a hotspot.

you can disable NICs since Windows 2000, if you are trying to utilize ethernet with different subnet, you still can without having to "disconnect".

Is there a website you can load up another site through. like to hide your ip??

Term you are looking for is proxy. Google should yield some results for that.
