Unless you're working with really big datasets, you'll notice very little difference between SATA and NVMe SSD's, so I'd go with one of the following.

 

Samsung 860 EVO 1TB - currently $150 USD, but can snag for cheaper when on sale

You have a M.2 slot on your Motherboard?  I use the Crucial P1 1TB for my boot and gaming drive.   I game, browse the internet etc...  No issues so far.
