Second computer build advice?

Me and my girl friend moved from no tech, terrible internet Montana out to around Seattle Washington. We got lucky on an apartment that has a little nook for our desks and computers. And living room for consoles. We have gigabyte speed internet and both are heavy gamers and tech users planning to stream and edit.  I’m hoping to go for a whole new computer setup and can’t decide on a pre build or building my own. I built my first computer and definitely overspent for low performance but it is dependable and gets the job done. Hoping To game, stream and do video editing so two monitors would be nice. Going for general cost of $1,200-$2,200. Any advice or suggestions would be appreciated.

What kind of video? 1080p, 4k etc...?

The monitors I have now are terrible and need to be upgraded, I’ll than when I’m back home. I do appreciate the advice

With what you all have suggest so far I think I can put together something. I’m definitely leaning more towards building my own now. But have a website for fun axing a whole custome picked build through dell but it’s dell so yeah. Honestly I know now I’ll be going with the i7 intel processor, and a gtx 2080 of some sort. I can use my old power.
