Any way to get it to display 3 lines?

Edit the subtitles to include three lines worth of dialogue.

It's entirely possible to have as many lines of dialogue, when editing a YouTube closed captain:

But the way these closed captions work, is that you add captions at certain portions of the video:

As a caption creator, you decide how long a caption stays on screen and how much text you want to put in it.

 

So basically, to answer your question; if you want three lines (or more) of dialogue in the closed captions, you need to create a CC track yourself.

As for the automatic captions, I don't believe there is such an option.
