I was running sli but I upgraded my cpu and Mobo I'm reselling them and one of the 1080's and would like to keep my newer card and sell the older one.

If they're identical cards, it doesn't really matter which card was bought earlier.

I suppose performance wise yeah but like warranty and use would be fairly substantial I suppose.

If the cards are identical models, there will be essentially no difference between them.

Do you have the packaging for both videocards? If so, you can see a serial number on both the videocard and the packaging and maybe you have something to recognize the packaging from.

Perhaps there is like a copyright marking which changes in the mean time between purchasing both cards

Spoiler

To Verify the Original Manufacturer Barcode

The S/N stands for Serial Number and this label is located on the retail box
Example 1:
Within the serial number after the letter B, the 16 represents the year and the 09 represents the month of manufacture. In this example, this VGA card was manufactured on September 2016.

Go here and click on the Graphics card part. It'll show you.

I'm not actually trying to be as grumpy as it seems.

I will find your mentions of Ikea or Gnome and I will /s post.

How do you plan to warranty one? How do you know which one has warranty left? Assuming they don’t need registered and proof of purchase.
Should be several sticker on the back that would address batch or a date or even bios version in gpuz. Should have a date corresponding to that.
