I am new to gaming PC stuff. I've taken apart and built PC's before but i've never gone out and bought parts individually. I've been starting to save up and I want to start looking to components for a setup. I started off with the CPU and I thought that I would get the Intel i5- 9600k, but it says the memory support for it is two channels of DDR4-2666. When I started looking around for RAM I found it hard to find anything that low, most of the stuff I saw was between 3000 and 3600. Even when I looked at Intels super high end stuff it said the same memory support of DDR4-2666. Am I not able to have RAM with a higher speed than 2666MHz? or am I completely missing something?

Officiall speed is only 2666mhz. Meaning outside of overclocking boards you will be locked to that speed maximum. Overclocking boards like the Z-series will allow you to run much higher.

I would suggest getting the better r5 3600 instead.

Why would you recommend over the i5-9600k?

More cache and double the threads provides a better 1% 0.1% low performance which matters more than raw averages on fps since otherwise you're more prone to stuttering and micro-freezes during gaming.

You also get improved multi-tasking capacity, all that for actually cheaper than the i5.

Intel is very hard to justify until the upcoming 10th gen in April that should improve their value proposition.

Similar single core (bit higher core to core latency though) but twice the threads due to SMT (AMD's version of HyperThreading). Nicer on 1% lows (stabler framerate) and if you run anything in the background. If all you care about is max fps numbers, then the 9600K stomps.

HT/SMT allows for better 1% lows due to the threadcount. While offering similar singlethread performance.

Also you can buy cheaper boards that will make the most of the CPU.

3600 is better choice long term IMHO.

slightly cheaper, has 12 threads (in some circumstances, that is useful: eg.: BFV multiplayer, some games will have more consistent frame rates, better 0.1% lows.). AND you are fine with a half-decent B450 board (even a cheap one, like Asrock B450 Pro4 or MSI B450 A-Pro MAX, Gaming Plus MAX).

For the 9600k, you'll need a better Z390 mobo (Gigabyte Z390 Gaming X or some such). I think, you will make a better choice with 3600. : )

What GPU will you be running? What resolution and refresh frequency? BC the differences between different CPU-s are most marked in 1080p & low-med graphs with more powerful GPU-s (2070su for instance). In realistic scenarios (ie.: either a lower range graphics card with maxed out graphics, or higher resolution (2k, 4k), the cpu has a less crucial role. The higher the graphics settings& resolution, the more GPU bound is the performance, that's why differences between CPU-s decrease on 1440p&4k gaming.

Life is really challenging. I don't always suceed: )

At first I was thinking the GTX 1660 SC ULTRA with the i5-9600k, but now that people are recommending the r5 3600 i'm leaning towards the RTX 2060 Super.

That is just a even bigger reason to use the r5 3600.

Better CPU choice, and you get a better GPU.

in that case, there won't be any significant difference in performance between 3600 and 9700k.. I'd say, pick the Ryzen.
