I've always seen the personalization stuff being locked from day one, no trial...

If you enter the generic key, you'll have 30 days, then some options related to OS personalization will be locked, and you'll have a "Activate Windows" watermark at the bottom right corner of the screen that will show on top of everything.

 

If pick "I don't have a key"/"skip", and you don't have a key associated with the hardware nor associated with your Microsoft account nor is an OEM system where the product key is stored in the UEFI chip (Windows 10 has a cool system that stores your product key on their server and associate it with the system main account or (if you don't have a Microsoft linked account) hardware specs and serial numbers), then it will run in not activated state. This means that personalization options will be disabled, and you'll have "Activate Windows" watermark at the bottom right corner of the screen that will show on top of everything.
