I’m wondering which build I should go with.

I will mainly play games and with the second monitor use discord or google chrome.  I’ll probably go with a 1080p 144hz monitor.

I’m wondering which build would be more ideal for what I’m planning to do and if there are any suggestions or improvements to them, like mixing and matching them.

With the money saved from the amd build, I’ll probably use it for a good monitor, possibly a 1440p since I’ll have extra money.  I know with the amd parts I’ll get less frames so in 1440p idk if it’s worth.

1. That's not a 2070 super, just a 2070 (and an overpriced one at that)

 

2. EVGA B3 is worse and more expensive than the EVGA GQ or Rosewill Capstone 650w units, see no reason to get that

 

3. A55 is a DRAM-less SATA SSD, Team MP34 1TB sells for a bit more (DRAM SATA SSD money) for an NVMe SSD with DRAM, I'd buy that instead

 

4. Since you're opting for higher screen resolution I'd rather spend less on the CPU for a better GPU, so R5 3600 + 2070s. If that's too expensive, 5700XT isnt a bad choice tho you give up the superior hardware encoding function (useful for screen capture) and it is slower. Also a thing with RDNA GPUs is that they slow down more than Nvidia cards as you increase the resolution, more so than their older GCN cards so the old situation in which AMD cards overtake Nvidia cards with increased screen resolution is reversed now

Would you recommend any certain coolers for the 3600?

Depends on budget, but it's alright with the stock cooler.
