Gaming Home Office Build - Dad Money

Hey, I'm trying to bring my PC into the current gen of gaming.

1. Budget: $1000 or less (not include monitor just purchased)
2. Goal: Cyberpunk 2077, Ghost Recon, Minecraft, RDDR2, Sketchup, Photoshop, and Quickbooks
3. Monitors: 2 - Dell U2212HM (1920x1080 @ 60Hz) and 1 - Dell S2719DGF (2560 x 1440 @ 155Hz) Got the S2719SGF today for $285
4. Extras:
5. Why: I have a 6+ year-old setup that is great for my work needs, but not gaming.

• CPU - AMD Ryzen 5 3600
• CPU Cooler - ???
• MOBO: MSI B540 Tomahawk Max
• RAM: G.Skill - F4-3600C18D-16GTZRX v F4-3200C16D-16GTZRX v F4-3200C14D-16GTZRX (Newegg Comparison)
• SSD: M.2 - 1tb ???
• HDD: I have tons of leftovers for storage
• GPU: Sapphire RX5700xt Nitro+ v RX5700xt Pulse OR PowerColor RX5700xt Red Devil v RX5700xt Red Dragon
• PSU: ??? Waiting for everything else
• Extras: I am good as this will upgrade into an existing setup

I would like to get some opinions on RAM and GPU specifically; I like G.Skill and Sapphire so thats what I picked, but i can be convinced otherwise.
