CPU bottleneck ???

It depends on what refresh rate target you are after.

 

To ditch a RX580 I'd personally aim for the RX5700XT.

 

The R5 1600 is perfectly adequate for 60fps gaming.

I'd say to go for the works, and get a R5 3600 and a 5700 XT or comparable Nvidia GPU. At those resolutions and framerates, you kinda need the extra CPU cores and speed.

That is my own GPU configuration and I'll ensure you want more GPU than CPU here, you are looking at the 2060S and 5700 as minimum and the 2070S and 5700 XT as desirable value wise.

 

you can keep using the 1600 just overclock it and get your memory to at very least 2933mhz or higher frequency it should hold up fine enough for a 100hz target on anything but the top triple a games and in those cases just make use of adaptive sync.

 

e-sports will be 100hz+ always.

How much OC are we talking on the CPU ?

It should be at least 3.8ghz all cores
