Old PC Dying so thinking of starting from Scratch

So I've been doing some thinking,

 

I have two questions:

  1. What's the difference between the 970 EVO and 970 PRO NVME, listed above.
  2. In my current PC, I have a NZXT x52 AIO, should I re use it or upgrade to the x72?

So I built my first ever computer back in 2015...and back then it had a Corsair H100i and GTX970 from MSI...I've since upgraded from then. My computer has recently continued to hard freeze over and over...random blue screens with no errors and now inoperable. This happened a year ago and the only thing that solved it was a hard reset of the entire PC. So I believe there is something corrupted or failing somewhere. Due to my current specs being less then desired...I plan on building a PC. I do a lot of gaming and Photoshop/picture editing work So I'm looking for recommendations/thoughts.

I use mostly adobe programs to do my edits i.e. photoshop, illustrator, lightroom, etc. My budget might be around 3k USD, I know this is a weird time to think about building a PC since new things might be coming out...that's why I'm looking to you guys for help.

You can set storage up however you'd like, but this is around what I would do for that type of work

Thank you for your observations, I went through my list and made some adjustments. Also with the graphics card I have...I figured I could wait a bit longer since that's the easiest to upgrade. Any other additional comments/concerns/ thoughts would be great.
