Here is a build with a couple of changes.

 

Ignore the Ram change as you want it for looks not pure performance. 

 

Should i switch to that mobo from the Asus TUF GAMING X570-PLUS (WI-FI) ATX AM4 Motherboard? (Dont care for the wifi btw)

Featurewise the Auros is better.

 

VRM wise the Tuf is better. The Tuf should have a slightly better Bios, tho i havent looked a lot into the new gigabyte BIOS.

The highest 2 x 16 GB kit i can get is 3466 Mhz, will this be fine and then overclock to 3600?

Most likely, but id use Ram identifier software to figure out which die-type it is. Then use Ryzen Ram calculator to tweak timings. 

 

Simple overclocking to 3600 shouldnt be difficult, but its capacity sticks and it can at times be difficult.
