So I am thinking id like to have a small low powered system for doing some file server type of duties but I am not really sure if I want to mess around with something that doesn't have hardware raid or not...ANyone used things that don't use hardware raid with much luck?

You do not need hardware-RAID for a fileserver and it's in many ways better to use a software-based one, like e.g. you can then use filesystems that are specifically designed for RAID -- both ZFS and Btrfs, for example, offer a whole lot value over H/W-solutions. And yes, I've used Btrfs for several years; not sure how many, but at a guess it'd be 5-6 years.

Yeah just samba shares that I can navigate to on my windows computers.

Should be as simple and cheap as a rPi 4 and the drives attached via USB 3. (Or rPi 3 and USB 2). Run Damn Small Linux or Puppy Linux and share the drives. I know several people doing similar to make their own cheap NAS.
