B18 mini pc, i9 8950HK build options?

I have the B18 mini pc with i9 8950HK, 32gb ram, 512gb ssd, m.2 500gb Samsung 970 pro nvme, EVGA RTX 2080 xc ultra, x16 riser to x4 m.2 m-key. 

I'm looking for build options.

I'm thinking about getting a pelican case to put a 18.4+ monitor 2k 144hz, and I'm sure I need a 1000w psu, at least a 750w psu for just the RTX 2080. I'm also thinking about water cooling everything to keep the 5.0Ghz+ overclocking. 

I love the crazy builds they do on LTT but I have not seen them do this one yet and I would like some advice from someone that knows what to do. I'm just throwing this together with just an idea. 

Oh and I'm also planning on making a small unit from my rig to us as a VR backpack, but that is after I get this tiny rig set up.
