Clock speed is the only difference. The Extreme has a higher factory overclock applied than the regular 1080ti card.

As someone who owns the Aorus 1080Ti XTREME Edition... No idea.
I think the XTREME has slightly higher base clocks, as well as an RGB backplate.

Are you looking to buy these new or 2nd hand? How much does each cost?

Gigabyte also offer a longer warranty on the Extreme edition. You can also sign up to their extreme club or something like that.

Well, someone is selling new Aorus. Not Xtreme. It’s 189 Kuwaiti Dinar=620 USD.
