This should do for 1080p easy and even 1440p, you have extra money there for a 2600 if you can find on sale. The price can be cheaper but I personally only shop with Amazon and Ebuyer so that's up to you. 

Here's a vega 56 version of the same build but with a beefier psu, going with either the 2060 or vega 56 you'll be happy both can do 1080 and 1440p AAA titles at 60hz

To get the RTX2060, you'd have to cut around £200 from elsewhere, and I don't recommend that you get parts that are mega budget as you'd most likely either have problems, or have to replace them sooner than getting decent parts to begin with. It would be easier to get the RTX2060 with a Ryzen build though.
