Quad Config RAM Questions

I know its general principle that RAM not be mixed and matched and that its better to just get a matching kit.
However, if I had an 8(2x4)gig Kit but a 4 slot motherboard could I:

Add a set of 2x8 in the existing free slots of different brands? I wouldn't think it would matter.
Would I still need to consider matching voltages, speeds, timing, etc. between the old set and the new set?
Or because they're on a separate channel that wouldn't matter?

In theory doing this should work, but there is no way of being sure. And if your ram kits have varying rated speeds and timings, you might not be able to get your timings as tight and your speeds as high as you would with just one kit.

I guess worst case situation I just have a 16 gig kit and then just sell the 8 gig kit.
Maybe the two channel sets run independently of one another and I'll get lucky.
